  • Being a committed vegetarian doesn't mean you're stuck gnawing on a raw carrot while everyone else enjoys their food. (There is, admittedly, that austere a form of vegetarianism in India, but let's not go there.) India has a whole tradition of so-called Vedic recipes. Here, for example, is one way to cook rice—the "second bread" for so many countries. Rinse the rice thoroughly in cold water and soak it for about 20 minutes, then drain it. Heat vegetable oil or ghee in a pot and add the spices—frying the spices in oil first is what draws out their fullest aroma. Once the cumin changes color, add the chopped pepper, then the rice. Fry the rice for 2–3 minutes, stirring constantly. When the grains turn translucent, pour in the salted water and let it boil for a minute. Then lower the heat and cook the rice for another 20 minutes, until all the water is absorbed. Lift the lid, sprinkle the rice with lemon juice, and dot it with pieces of butter. Cook uncovered for 2 more minutes. Just before serving, gently fluff everything with a fork. Top each portion with a lemon wedge and garnish with parsley.
