Tomato Adjika with Bell Pepper, Cilantro, and Walnuts

I found the smartest possible use for tomatoes! You might be puzzled by such a specific name — "tomato adjika." "Made from tomatoes, obviously! What else would it be?" you might ask. And you'd be completely wrong! Believe it or not, real adjika doesn't contain any tomatoes at all — just chile peppers, garlic, and salt. So once you add tomatoes to the recipe, it's more accurate to call the result a sauce. But let's not split hairs — let's get cooking!

  • So, run the tomatoes and bell peppers through a meat grinder. Good news — you don't need to remove the tomato seeds. Stir, pour in the oil, and set it over low heat. Cook for about an hour. Then turn off the heat, let it cool, and add vinegar, salt, finely chopped garlic, sugar, and the herbs ground through the meat grinder. If you like, add ground coriander and ground walnuts as well. Mix thoroughly again and let it rest and develop flavor. Enjoy it with bread :) Just definitely not right before heading out among people :))
