This Spanish soup is a summer essential — refreshing and revitalizing! Everyone knows gazpacho is a Spanish soup. But nobody (except the Spaniards, of course!) knows exactly how to make it. There's an endless number of recipes online for this zesty, delicious, satisfying Spanish dish, with plenty of variations, and each author insists their version is closest to the original. I won't make any such claims — that's a losing battle. I just want to share how I make classic gazpacho.
