Tsada Salad — Beef, Beans, and Pickles in a Garlic Sour Cream Dressing

A hearty, filling, and delicious salad for anyone who loves a good meat salad. I came across the recipe for this potato-and-bean "Tsada" salad with beef in a friend's old recipe notebook from her student days. As a fan of Georgian cooking, I copied it down on the spot. The first time I made it, I could hardly believe such ordinary-looking ingredients could turn into something so special. But they did — and whenever "Tsada" hits the table, everyone's appetite roars to life. I make it often, especially since it doesn't call for many ingredients and they're almost always on hand.

  • I pick over the beans (dried or fresh), then boil them over moderate heat and drain. If it's winter, I chill the beans out on the balcony; if it's warm out, you'll just have to wait for them to cool. I boil the potatoes in their skins, then peel and dice them. I boil the beef and cut it into cubes the same size as the potatoes. For the dressing, I stir together sour cream, crushed garlic, salt, and dried herbs. I finely chop a red onion. Then I toss everything together and chill the salad in the refrigerator for half an hour. This dish pairs beautifully with a glass of red wine and lively conversation among good company — even the coldest day fills up with the scents of a warm southern summer.
