Herring Under a Fur Coat, Rolled
A dazzling, original take on a beloved layered salad, with a fun presentation! This clever recipe for a rolled "fur coat" came to me from my husband's relative. He adores herring under a fur coat and asks me to make it for every holiday, weekday, and weekend alike.

Cooking method
- First, soak the gelatin in cold water for about an hour. Meanwhile, boil the vegetables. Now melt the gelatin over a water bath and let it cool completely, then stir in the mayonnaise and mix well. Grate the boiled vegetables and the cheese (NOT cooked!) on the coarse side of a grater. Put each vegetable on its own plate and mix each with some of the mayonnaise mixture — do not combine the ingredients together! And now for the fun part: lay a sheet of plastic wrap or a bag on the cutting board. Spread the beets on top in a layer the shape of the board, then a slightly smaller layer of carrots, then potatoes, cheese, and herring fillet. Each new layer should be a bit smaller so the edges of the one below show. Then carefully gather the edges of the wrap to form a roll. Chill the finished dish in the refrigerator to set. After a couple of hours, take it out and slice it like a roll. You end up with something like "herring under a fur coat" rolls — or, as I call it, herring under a fur coat, modern style.
