Mushroom cream soup with dried porcini mushrooms

Cooking method
Soak the mushrooms for 2 hours, then boil.
In a large saucepan, melt the butter over medium heat. Put the finely chopped onion and celery and fry well until golden brown. Add half the chopped garlic, mushrooms, cumin, salt and pepper and fry for another 7 minutes. Pour in the brandy, bring to a boil and cook for 2 minutes. Pour in the broth, bring it to a boil again, then reduce the heat and cook for 15 minutes.
Remove the soup from the heat and use a blender to puree it, grinding all the components. Pour in the cream, bring to a boil again and cook for another 5 minutes. Remove from heat.
Preheat the oven to 120 degrees. Cut the baguette into slices. Prepare garlic oil. To do this, mix the remaining chopped garlic with olive oil. With this mixture, lubricate the slices of bread on both sides. Place on a baking sheet and sprinkle with grated cheese on top. Bake for about 5 minutes, until the cheese melts.
When serving, pour the soup on plates and put 2 croutons in each.
