Step 1:
How to make fried apple pies in a frying pan? First, prepare the dough. Prepare the products. Kefir and eggs should be at room temperature, so take them out of the refrigerator in advance. You can use olive oil or sunflower oil without smell.
Step 2:
Combine kefir, eggs and vegetable oil in a bowl. Thoroughly whisk all the products with a whisk until smooth. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Step 3:
In a separate bowl, sift the flour and mix it with sugar, soda and salt. It is important to sift the flour to saturate it with oxygen. Then the baking will turn out to be airy and will rise well when baking.
Step 4:
Pour the flour mixture into the kefir in parts and knead the elastic soft dough. Flour may need more or less. It depends on the quality of the flour itself, the size of the eggs and the consistency of kefir. At first, the dough sticks strongly to the hands, but as it is kneaded, it becomes less sticky. The finished dough remains a little sticky, but it does not stick to your hands. Wrap the prepared dough in plastic wrap or transfer it to a bag so that it does not wind up.
Step 5:
Meanwhile, prepare the filling. Prepare the products. Apples are better to take juicy, sweet and sour. I took some regular seasonal apples and a few Granny Smith varieties. Apples should preferably be taken with a dense, not loose pulp, so that they retain their shape during stewing.
Step 6:
Wash the apples, dry them, peel them and cut them into small cubes. To prevent the already sliced apples from darkening while you slice the rest, immediately put them in a bowl and pour lemon juice over them. Add each new batch of sliced apples immediately to the bowl with the rest of the apples and mix with lemon juice.
Step 7:
Pour sugar and cinnamon into the apples.
Step 8:
Mix everything well.
Step 9:
Put the apple mass in a frying pan heated over medium heat, pour in water and simmer, stirring, for 10-12 minutes. The excess liquid should evaporate, but the apples themselves should remain intact and not boil in puree.
Step 10:
Put the finished apples in a bowl and cool.
Step 11:
Divide the dough into 12-14 identical parts. Roll each part into a ball.
Step 12:
Roll out the dough ball with a rolling pin into small round or oval cakes. Put 1 tablespoon of apple filling in the middle of the tortilla.
Step 13:
Carefully pinch the edges, forming an oblong patty. Form all the other pies in the same way.
Step 14:
Heat a little vegetable oil in a frying pan. It should completely cover the bottom of the pan. To check whether the oil has warmed up well enough in a frying pan, you can do it in a simple way. Lower a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process. Lay out the pies and fry over medium heat for about 4-5 minutes until golden brown.
Step 15:
Then flip the pies to the other side and fry for another 3-4 minutes.
Step 16:
Put the finished pies on a plate with paper towels — they will absorb excess fat. Serve them to the table hot. Bon appetit!
