Step 1:
Prepare the ingredients. The longest in preparation for the preparation of this dish is the collection of honeydew. This process is very important and responsible, you need to be able to distinguish real honey mushrooms from false ones, so as not to collect poisonous mushrooms. After collecting the honeydew, we carefully sort it out, wash it, cut off part of the leg, leaving a couple of centimeters on top.
Step 2:
It is better to have freshly picked mushrooms to remove not only various kinds of dirt, but also insects hidden in the mushrooms, soak them for a couple of hours in salted cold water. Then we wash the honeydew again and throw it into a colander so that the excess water runs off. Large mushroom caps can be cut, small ones can be left whole.
Step 3:
Potatoes are washed, cleaned and cut into thin cubes or cubes, as you like. Onions are cleaned from the husk, if the head is not large, cut into rings, if large - with halves of rings.
Step 4:
Pour vegetable oil into the pan. We warm it up. We put the honey mushrooms in the pan. Add bay leaf and peppercorns. Fry the mushrooms in oil, stirring with a spatula, over medium heat for about 10 minutes.
Step 5:
Then we send the cooked onions to the mushrooms, mix and continue to fry them together for 7 minutes, do not forget to mix periodically with a spatula. Remove the bay leaf from the pan.
Step 6:
We send potatoes into a frying pan with mushrooms, pour in a little more vegetable oil, mix and fry for about 20 minutes more, until the potatoes are soft, over medium heat. The frying pan should not be covered with a lid during frying, so that the potatoes do not turn into mashed potatoes.
Step 7:
You need to mix periodically, but not often, so as not to break the potato cubes. At the end of frying, add salt to taste. Gently mix potatoes with mushrooms, turn off the fire. The dish is ready. We serve it to the table, sprinkled with chopped fresh herbs, with fresh vegetables and bread. Enjoy your meal!
