Fried Beef Liver in Cornmeal
The tastiest liver recipe there is! It comes out soft, juicy, and tender. Every bite melts in your mouth — soft, delicate, fragrant, with a wonderful crisp crust. This is the best fried liver recipe I've ever tried. Make this fantastic liver and you won't regret it!

Rinse the liver, pat it dry, remove the membrane, and cut it into large pieces.

Make the marinade: in a bowl, beat the egg with the salt, sugar, baking soda, and pressed garlic.

Pour the mixture over the liver pieces and leave them to marinate in the refrigerator for about 2 hours — you can also let them sit overnight.

Fry the peeled, half-mooned onion in a little vegetable oil. Transfer it to a plate.

Dredge each marinated piece of liver in cornmeal and lay it in the hot skillet where the onion was fried.

Add a little more oil and fry on both sides until golden (about 3 minutes per side).

Once the liver is evenly browned, scatter the fried onion over it, stir, cover, and let it simmer over low heat for another 5 minutes. Check for doneness by cutting into a piece — if there's no pink inside, it's ready!
