Fried Pike Roe
The perfect dinner — try it and see for yourself! My husband and I made fried pike roe for dinner last night. I loved it and I'm already craving more, so I'll definitely be making it more often. It was a light meal, free of "bad" fats and carbs, rounded out with asparagus and fresh vegetables.

- Rinse the pike roe under cold water, taking care not to tear the membranes, then season with salt. Heat half of the olive oil over medium heat and fry the roe on both sides, about 5 minutes per side, seasoning with salt as it cooks. Put the asparagus in a bowl, drizzle it with the remaining olive oil, and add salt and pepper. Toss well to coat it evenly with the oil and seasonings. Sear the asparagus for about 5 minutes in a grill pan. Serve alongside the fresh tomatoes. Enjoy!
