Beef Lagman

Homemade lagman with beef and vegetables. Lagman is a dish that comes to us from Central Asia. Traditionally it's made with lamb, plenty of fragrant spices, and vegetables. At home, a great way to get to know it is to make it with beef — a simpler take, but no less good. The result is a richly flavored, wonderfully aromatic dish the whole family will love.

Cooking method

    To make beef lagman, start with the noodles. Sift the flour into a deep bowl and add the salt and egg. Mix well. Add the warm water and vegetable oil and knead into a smooth, elastic dough. Let it rest on the counter for about 30 minutes.

    Knead the rested dough a few more times, then roll it out into a thin sheet on a lightly floured surface.

    Dust both sides with flour and fold it into a loose roll. With a sharp knife, cut it into thin strips.

    Boil the noodles in salted water for 3–4 minutes. Drain in a colander and rinse with water.

    Now gather the ingredients for the meat and vegetable topping.

    Rinse the beef and pat it dry with a paper towel. Trim out any gristle and sinew, and cut it into small pieces.

    Peel the onion and slice it into half-moons. Halve the celery stalks lengthwise and slice them. Peel and chop the garlic as well.

    Peel the carrot and cut it into sticks. Core the bell pepper and slice it. Score a small X on the bottom of each tomato, pour boiling water over them, slip off the skins, and chop. If the tomatoes aren't very juicy, add a little tomato paste or ketchup.

    Brown the beef in oil on all sides.

    Add the carrot, onion, garlic, and celery to the meat. Cook everything together for 5–7 minutes.

    Add the bell pepper, tomatoes, salt, pepper, and spices to taste. Stir, cover, and simmer until the meat is tender, adding a little water if needed.

    Put the cooked noodles in a bowl, top with the meat and vegetables, and ladle the sauce over. Sprinkle with chopped fresh herbs to taste.
