Simple Pan-Fried Syrniki with Egg (Farmer's Cheese Pancakes)

Tender, fluffy, and homemade — perfect for breakfast or with tea! I love these simple farmer's cheese syrniki with egg for how easy and affordable they are. You can even whip them up in the morning before work — they don't take long. (Syrniki are little Eastern European cheese pancakes made from tvorog, similar to cottage cheese.)

    Then add the farmer's cheese, pressed through a sieve, and mix everything well. The smoother the cheese, the more uniform the batter — and the more tender and delicious the syrniki.

    Stir the semolina into the batter.

    Add the baking soda, vanilla, and sifted flour. Mix into a dough with a spatula. You may need a little more flour — it depends on how moist the cheese is. The dough should be stiff enough to shape by hand.

    Set out a cup of cold water and dip a spoon in it. Use the wet spoon to scoop a bit of dough into the flour, then roll it in the flour with your hands and shape a small, round patty.

    Pour vegetable oil into a hot skillet and add the round syrniki. Keep in mind they'll puff up a little more as they cook. Fry them over low heat for a couple of minutes, until golden.

    Then flip and fry the other side for another 1–2 minutes, watching so they don't burn.

    Line a plate with paper towels and set the finished syrniki on them to blot off the excess oil. Pour a cup of tea and serve the hot syrniki with sour cream, jam, or sweetened condensed milk. Enjoy!

  • The most important part of making syrniki is getting the dough right — and don't forget the little bit of baking soda, which is what makes them light. If you like, stir raisins, nuts, or candied fruit into the dough. Even fresh fruit like apples or pears pairs beautifully. Give it a try — it's really delicious!
