    Gather the ingredients for egg-fried bread — they're always on hand. Use whatever bread you like and have: white, rye, a baguette, or a whole loaf. Cut it into slices no more than 3/8 inch (1 cm) thick. If the slices seem too big for your pan, cut them into smaller pieces.

    Crack the eggs into a deep bowl and add a pinch of salt and black pepper to taste. If you're making the sweet version, use sugar to taste in place of the pepper, and adjust the salt so it doesn't overpower the sugar. Beat the eggs with a fork, whisk, or mixer until the mixture is smooth and the whites are fully blended.

    Dip each slice of bread into the egg mixture — do it quickly so the bread doesn't soak through and turn soggy, or it won't fry up properly. A few seconds a side, flipping once so both sides are coated, is enough.

    Pour a couple of tablespoons of vegetable oil into the pan. For a richer, creamier flavor, fry the bread in butter instead. Turn on the heat, lay the slices in the hot fat, and fry over medium heat until golden on both sides — about 20 seconds on the first side and 10 on the second. To make sure the bread is cooked through, cover the pan and hold it on the heat for about 15 seconds.
