Grilled Potatoes on Skewers
A wonderful side dish made from everyone's favorite — potatoes! The whole family or a big group of friends can pitch in on this one. Incredibly fragrant, the potatoes take on a new flavor depending on the spices you add to the marinade.
Cooking method

Step 1:
Wash the potatoes well and pat them dry with a towel or paper towels.

Make the marinade in a separate bowl. Combine the soy sauce, oil, pepper, oregano, and any dry seasonings you like. You can use a pinch of salt in place of the soy sauce.

Mix everything well. Adjust the amount of chili to your taste, or leave it out entirely.

With a paring knife, make a few shallow slits in each potato, about 1/16 inch (1–2 mm) deep. Pour the marinade over the potatoes, toss well, and let them sit for a while.

While the potatoes marinate, light the grill.

Wash the skewers and thread 2–3 potatoes onto each. Don't pour out the leftover marinade — you'll want it later.

Step 7:
Set the skewers over the coals. Cook, turning them now and then, until the potatoes are done (test with a toothpick). This takes about 15 to 30 minutes, depending on the variety and size.

Step 8:
Carefully slide the finished potatoes off the skewers. Brush each one with the reserved marinade using a silicone brush, then scatter your favorite herbs over the top.

Serve with a salad, grilled sausages, or shish kebab.
- There are only a few warm, sunny days left before the cold sets in and winter arrives. Whenever we fire up the grill for kebabs, with family or friends, we always make these skewered potatoes too. Charcoal-cooked potatoes are a wonderful, delicious side for meat and salads. Build the marinade around your own tastes, adding whatever seasonings and spices you love. The potatoes don't need long to marinate — 10–15 minutes, about as long as it takes the coals to burn down, is plenty. Score each potato with a paring knife so the marinade soaks in better. Small, evenly sized potatoes work best here. They're delicious both hot and cold. Enjoy!
