Classic Cottage Cheese Syrniki (Skillet)
A simple, tasty, wholesome breakfast! Syrniki are one of the most popular cottage cheese dishes. The classic version skips any extras beyond the essential ingredients, which is exactly why it's the most popular — everyone loves them.

Step 1:
Let's gather the ingredients — there are just five: cottage cheese, wheat flour, an egg, salt, and sugar, plus vegetable oil for frying. The key is to use fresh, good-quality ingredients, especially if you'll be serving this to kids.

Put the cottage cheese in a deep bowl — mine is 9% fat. Use whatever fat content suits your taste and calorie goals: for kids, a rich farm-style cottage cheese is nice, while a low-fat one works if you're watching calories.

If the cottage cheese is dry and grainy, press it through a sieve or blend it smooth. Mine is fairly moist and soft, so it didn't need any of that. Add sugar and salt to taste and stir. If the cottage cheese is too dry, you can mix in a spoonful or two of sour cream or heavy cream.

Step 4:
Crack the egg into the cottage cheese — it helps the syrniki hold their shape and keeps them from falling apart as they fry. Mash everything together with a fork or a blender.

Add half of the sifted wheat flour and mix well until you have a thick, sticky dough.

If you're using homemade cottage cheese, you may need less flour — go by the feel of the dough. It should be firm but not stiff; that's what gives you soft syrniki that practically melt in your mouth.

Pour vegetable oil into a skillet and heat it well. Put the remaining flour on a plate, spoon a little dough onto it, and roll each portion in the flour, shaping them into little pucks with your hands.

Set the syrniki into the hot oil and immediately lower the heat to medium. Fry for 2–3 minutes per side, until golden brown.

After flipping the syrniki, you can cover the skillet and let them cook a few more minutes so they bake through inside. Take them off the heat and serve. Enjoy!
