Foil-Baked Pork (Buzhenina)
Making buzhenina at home isn't hard at all. Buzhenina is really more a method than a specific dish — juicy pork roasted as one large piece. What matters most is choosing the right cut and marinating it well in spices.

Step 1:
Gather your ingredients. For foil-baked pork you'll need: a single piece of pork leg, garlic, mustard, dried rosemary, paprika, a pork seasoning blend, ground black pepper, and salt.

Combine the spices and salt.

Rinse the pork, pat it dry with paper towels, and set it on a plate.

With a knife, cut deep slits in the meat and tuck a garlic clove into each one. Rub the meat all over with the salt-and-spice mixture.

Brush the top of the meat with mustard — a silicone brush works best for this.

Transfer the pork to a deep bowl. Cover it with plastic wrap, keeping the wrap from touching the marinade as much as possible. Refrigerate to marinate for 5–8 hours.

Take the meat out of the fridge and wrap it tightly in foil so the juices can't escape, then set it on a baking sheet. Let it stand at room temperature for 1 hour.

Place the meat in a cold oven, then heat the oven to 350°F (180°C). Bake for 1.5 hours. Leave the finished pork in the turned-off oven as it cools for another 2 hours.

Take the meat out of the oven. Unwrap the foil, drain off the liquid, and transfer the pork to a platter.

Cover the meat with plastic wrap and refrigerate for 4–6 hours.

Slice the finished pork and serve. Enjoy!
- Traditionally, buzhenina is made from young pork, but at home you can bake it from almost any cut. What matters most is the method — slow-roasting in the oven until done. Go for a large piece: a leg or neck weighing at least 2 lbs (1 kg) is ideal, since the size and fat content guarantee great flavor. Shoulder or thick sirloin work in many buzhenina recipes too, but they need a bit more attention. The real secret is using genuinely fresh meat — even properly thawed meat comes out noticeably less juicy.
