Baked Pork with Eggplant

Hearty, delicious, quick, and easy — a great dinner. You can swap the zucchini for thinly sliced onion rings, or add whatever seasonal vegetables you have on hand.

    Rinse the pork, pat it dry, and cut it into thin slices. You can also use pre-cut cutlets. Mine were thick, so I pounded them thinner on both sides with a meat mallet.

    Cut the zucchini into rounds.

    Cut the eggplant into rounds as well.

    Stir the sour cream and mayonnaise together.

    Lay the pork in a greased baking dish. Season with salt and pepper and brush with the sauce.

    Arrange the zucchini over the meat and brush lightly with the sour cream–mayo sauce.

    Layer the eggplant rounds on top of the zucchini and brush with the remaining sauce.

    Bake in an oven preheated to 350°F (180°C) for 40 minutes. Grate the cheese and scatter it over the casserole, then bake for another 10 minutes, until the cheese is golden and bubbly.

  • Instead of layering everything, you can cut it all into small pieces, toss with the sauce, and bake it that way.
  • Homemade mayonnaise is worth the effort — it tastes better and is better for you. You can also use sour cream or plain yogurt instead of (or blended with) mayo in any ratio you like, which cuts the calories.
  • Keep in mind that every oven runs a little differently, so your temperature and time may vary from what's listed here.
  • How do you take the bitterness out of eggplant? Cut it into planks, rounds, or cubes, salt it, and let it sit for about 10 minutes until it releases its juices. Drain off the liquid, rinse the eggplant, and it's ready to cook.
