Baked Eggplant Stacks with Vegetables

Cooking method

    How do you make baked eggplant stacks with vegetables? Cut the eggplant into slices about ¼ inch (4 mm) thick.

    Soak the eggplant slices in salted water for 20 minutes. Pat them dry on a paper towel before frying.

    Stir the spices, crushed garlic, and salt into the mayonnaise.

    Quickly fry the dried eggplant slices in oil.

    Start building the stacks in layers. Brush each eggplant slice with the garlic mayonnaise.

    Set slices of vegetables (tomato and bell pepper, sliced ahead of time) on top of the sauce.

    Sprinkle with sunflower seeds. Scatter a little cheese over each layer, too.

    Brush the tops of the layered stacks with sauce and sprinkle with cheese.

    Bake the cheese-topped eggplant stacks for 15 minutes, until the cheese crust is golden and the vegetables are lightly cooked.
