- First, prep the steaks for the grill and marinate them. For the marinade, stir together the oil, all the spices, and the chopped onion and leek. Rub the mixture gently all over the steaks, arrange them in a dish for marinating, pour the rest of the marinade over the fish, and refrigerate overnight. By morning, the fish is ready to grill. Using a grill pan or a grill grate over coals, cook the chum salmon steaks on the stovetop or over the prepared coals to your desired doneness, turning once. Enjoy!
