- This recipe turns the everyday potato into something with real character and a pleasant kick. The steps are simple, and the result is excellent. 1. Peel and wash the potatoes. Cut them into matchsticks. Pour oil into a skillet and set it over the heat. Add the potatoes to the hot oil and fry until golden, stirring as you go. 2. Peel the garlic and mince it finely. Peel the ginger root and cut it into small cubes. Remove the potatoes to a paper towel, and in the remaining oil fry the garlic and ginger. 3. Peel the onion and cut it into large pieces. Add it to the skillet and continue frying until the onion turns translucent. 4. Seed, wash, and dry the bell pepper. Cut it into large pieces and add it after the onion. Fry for another couple of minutes. 5. At this point, add the salt and sugar, along with the chili powder. Pour in the soy sauce and tomato ketchup, and add a little water. 6. Return the potatoes to the skillet with the vegetables and sauce. Dissolve the cornstarch in a little water and pour it into the skillet. Bring to a boil and simmer for a couple of minutes until the sauce thickens. Serve hot or warm. In Chinese cooking, potatoes like these are often served with a side of rice, but the dish is plenty satisfying on its own. Enjoy!
