A light, airy, delicious salad that comes together fast and easy! I love simple salads — with three kids I'm always short on time, so I'm forever hunting for "quick, easy, tasty" recipes. This is one of them! It's also gorgeous enough to hold its own on a party table.

  • Make this salad for a celebration or just because — your family's thanks are guaranteed!
  • Homemade mayonnaise is worth the effort — tastier and better for you. You can also dress the salad with sour cream or plain yogurt instead of, or mixed with, mayonnaise in any ratio you like; that will cut the calories.
  • Every oil is good only up to a certain temperature — its smoke point, above which it starts to burn and forms harmful compounds, including carcinogens. It's worth learning the smoke points of your oils and choosing one suited to frying.
  • How do you buy crab sticks the right way? Check the expiration date, and make sure surimi (minced white fish) is first on the ingredient list. Don't buy sticks with frost on them — that's a sign they've been refrozen. Fresh sticks should be free of gray or yellow spots, springy, and slightly moist; if they feel sticky, they've gone bad.
