Potato and Pork Casserole with Cheese and Onions

Pork and potatoes under a golden, bubbly cheese crust! It's a popular, easy-to-make dish—hearty and delicious, though admittedly on the rich side. Guys especially love it, since they can't say no to meat and potatoes, but plenty of others won't be able to resist these aromas either.

Cooking method

    Wash the potatoes, peel them with a vegetable peeler, and rinse them clean. Cut out any eyes if there are any. Slice the potatoes thinly into rounds about 1/8 inch (2–3 mm) thick. A mandoline with the right blade works best (that's what I used), since it gives you neater slices of even thickness—important for the potatoes to bake evenly.

    Divide the potatoes into two equal portions. Grease a baking dish with vegetable oil and arrange one portion over the bottom. Season the potato slices with salt. Rinse the pork and cut it into pieces, then pound them thin with a meat mallet. Lay the pork over the potatoes as the next layer, covering them completely. Season the meat with salt and pepper to taste.

    Peel the onion and slice it into thin half-moons. Spread the onion over the meat as the next layer, then top it with the second portion of potato slices. Season the potatoes with salt again and, if you like, a little ground black pepper (optional).

    Grate the cheese on a fine grater and scatter it over the potatoes, then spread the mayonnaise over the cheese. Now bake the casserole: preheat the oven to 350°F (180°C). Once it's up to temperature, set the dish inside, close the door, and bake until done.

    The exact baking time depends on your oven and how thinly you sliced the meat and potatoes—on average, 40 to 60 minutes. I'd check for doneness at the 40-minute mark and return it to the oven to finish if needed. Once you taste it, you'll have a good sense of how much longer it needs, or you can simply check again. Divide the finished casserole into portions right away, plate it up, and enjoy.
