Chicken Stroganoff

Strictly speaking, it would be more accurate to call this dish "chicken-stroganoff" or even "chicken-mushroom-stroganoff," but the classic technique — flour cooked in butter for its nutty aroma, and the familiar serving over pasta or mashed potatoes — sets the terms here. So: a Stroganoff recipe with chicken and mushrooms!

Cooking method

    Rinse the chicken fillet, pat it dry, and cut it into large cubes.

    Peel the onion and cut it into medium dice — or half-moons or slivers, whatever you like.

    Put the flour, salt, and paprika in a bag and shake to combine. Add the chicken, close the bag, and shake to coat the meat in the seasoned flour. Set aside.

    Wash and cut the mushrooms — in halves, or in quarters if large. Thick slices work too, whatever you prefer.

    In a preheated skillet with oil, fry the onion with the mushrooms. Transfer them to a bowl for now.

    Add the chicken pieces to the same skillet. Fry, turning them over as needed. Don't overcook them.

    Transfer the chicken to a plate as well.

    Add the butter to the skillet, sprinkle in the remaining flour, and cook the flour until it turns nutty brown, stirring in the mustard as you go. Add the mushrooms, onion, and chicken to this mixture (the French call it a roux).

    Add the sour cream and cream, heat everything through, and serve. Garnish with fresh herbs or ground black pepper if you like — or grate over a little parmesan.

  • This dish is great served with spaghetti (or other pasta). For 1 serving you'll need about 3.5 oz (100 g) of spaghetti, a quart of boiling water with 1 tsp of salt and 1 tbsp of oil. Cook it according to the package directions, since the timing depends on the type of flour the pasta is made from.
