Wash the potatoes, peel and cut into slices.

Cut the eggplant into slices.
Step 4:
Preheat the frying pan, pour vegetable oil and spread the potatoes. Again, potatoes can be fried in two ways: under the lid or without it on high heat. I prefer the uncovered option. In this case, the potatoes turn out to be more crispy and toasted. Under the lid, it looks more like boiled and stewed, which I don't like at all. Salt, add spices.

Separately fry the eggplants.
Step 6:
Not to the end, as in the photo.
Step 7:
Mix potatoes and eggplants. Towards the end of cooking, add spices and salt. If desired, you can add chopped garlic.
Step 8:
Ready-made potatoes with eggplant are the most delicious when still hot. After cooling and subsequent heating, the taste changes completely.
