- Cut the white bread into evenly sized slices. Pre-sliced bread works, and square sandwich bread is ideal. 2. Cut the sausage into rounds or slices of any shape — use whatever kind you like. 3. Slice the cream cheese as well. You can use any cheese you like, but one that melts quickly over high heat works best. 4. Rinse the tomato and leek under cold running water. Slice the tomato thinly, and chop the leek fairly fine. 5. Crack the eggs into a small bowl or deep dish and whisk by hand. Add a splash of milk for a thinner consistency and whisk the egg-and-milk mixture again. Season with salt and ground black pepper to taste — the amount of salt depends on how salty your sausage and cheese are. Add any other spices you like. 6. Build the sandwich: place a slice of bread, then layer on the sausage, a tomato slice, a sprinkle of leek, and the cheese. Top with a second slice of bread and press down firmly to seal everything inside. 7. Set a skillet over the stove, heat it, and melt the butter. 8. Holding the sandwich firmly so the filling stays put, dip both sides into the egg-and-milk mixture, then set it in the skillet with the melted butter. Fry over medium heat on one side, then carefully flip and fry the other side until golden. These sausage-and-egg sandwiches are best served hot. Enjoy!
