Pan-Fried Cod Steak

Simple, super fast, and incredibly delicious! A breaded, pan-fried cod steak is a real treat. Cooking fish is so quick and easy that even a beginner can nail it, and a delicious dinner comes together in just minutes. Serve the steak with any side you like: potatoes, pasta, rice, or vegetables — fresh or roasted. Fresh herbs and lemon or lime wedges go beautifully with fried fish, and you can add any fish-friendly sauce, too — a creamy one is perfect.

  • First, prep the fish. Rinse three pre-thawed steaks well and blot off the excess moisture with a clean towel or paper towels, then season them generously with salt and freshly ground black pepper, rubbing the seasoning into the flesh.
  • Set out three shallow dishes: put breadcrumbs in one, flour in another, and crack an egg into the third, beating it with a fork. Season the contents of each dish with a little salt and ground black pepper.
  • Set a skillet — cast iron is best — over high heat. Pour in the vegetable oil and heat it well. Once it's hot, move on to the main event: frying the fish.
  • Here's the method: Take the first steak and dip it in the flour, skin side down. Then dip it in the egg, then in the breadcrumbs. Press the steak into the crumbs so they stick in a nice, even crust. Set it on a clean plate and repeat with the rest of the steaks.
  • Now add all the steaks to the hot skillet at once and fry the fish for 5 minutes. Then cover the pan and cook a few minutes more — no longer than 5. This matters, because cod shouldn't be overcooked: it loses flavor and starts to fall apart.
  • Plate the finished steaks. Add your favorite fish sauces, garnish with fresh herbs and lemon or lime wedges or slices, and squeeze a little lemon or lime juice over the top. Serve while the fish is still hot.
