  • A very pretty New Year's appetizer that I tried at an office party. They were swept off the table there in just a few minutes — of course, since they're caviar tartlets, and caviar is still a fairly pricey delicacy. These caviar tartlets are decorated to look like cats, with avocado used for the whiskers and face. But you could use cucumber instead. First, dice the lightly salted fish. Then set aside one egg white and finely chop everything else. Dice as much avocado or cucumber as you need. Now combine everything you've chopped, mix it well and spoon it into the tartlets. Top the filling with caviar. How to make the cats — Black cat: carrot for the tongue, face, ears; egg white for the eyes; cucumber or avocado for the pupils; red caviar for the nose. Ginger cat: carrot for the body and ears; egg white for the tongue, eyes and face; black caviar for the nose; avocado or cucumber for the pupils. Lay out the whiskers of both cats from thin strips of cucumber. The avocado tartlet recipe holds a place of honor at the very top of my notebook of party appetizers.
