  • I drain the oil from the can into a separate cup. On a fine grater, I grate a hard, sharp cheese. I mix it with the pepper and fish and run it all through a chopper. I crush the garlic in a garlic press and mix it with the oil from the can. The result is a dressing for a cheese-and-garlic salad made from canned saury. I spoon the cheese-and-fish mixture into a salad bowl, drizzle it with the freshly made dressing, and sprinkle it with finely chopped parsley. This simple salad — wonderful for any taste — was recommended to me by a friend for whom cooking is not just a daily chore but a beloved hobby.
