  • A salmon roll isn't a culinary masterpiece, but every cook should keep it up her sleeve, because it's quick and easy to make. Here's how I do it. These days you can buy plain thin Armenian lavash on every corner — that's exactly what we need. Then make a sauce from cream — preferably very rich; I sometimes add mayonnaise too — and processed cheese. Buy only the kind that spreads easily; "Druzhba," for example, is perfect here. Also add green onion and cilantro that you've crushed beforehand in a mortar. Spread all of this evenly over the lavash. Cut the lightly salted salmon into small pieces and lay them on top. Roll it up neatly, wrap it in cling film or foil, and put it in the fridge so the flavors soak in. Three hours is usually enough. Now you can serve it as a cold appetizer. Slice it about one to one and a half centimeters thick and arrange it on a large, pretty plate. You can garnish the sides with lemon and olives, and herbs on top. It looks appetizing and tastes amazing and unusual.
