  • If you want an appetizing, hearty appetizer, try my salad recipe. Take some apples, preferably sweet-tart varieties. Cut them into quarters, remove the cores, and dice them. You can peel them, but I usually leave the skin on, since it holds the most vitamins — or so the scientists say. Put them in a bowl and be sure to sprinkle them with lemon juice so they keep their color and don't darken. Then add the celery root, canned corn and nuts. Chop the nuts finely with a knife, but don't run them through a meat grinder. Mash the tuna with a fork and add it to the vegetables. Now let's make the dressing for the salad: take mayonnaise, sour cream, salt, pepper and any spices you like. This dish goes very well with jacket potatoes. For anyone who eats dinner late but doesn't want to gain weight, it's a great option. You can also swap the tuna for shrimp.
