Nalistniki with Potato Starch
Grandma's nalistniki — comfort in the kitchen, warmth in the heart! These rolled crêpes with farmer cheese are one of those dishes I remember from childhood. Make a batch — they're so, so tasty and comforting! My grandmother and mom used to make them for my brother and me, and now I make this treat for my own kids.

- Set up two bowls: in one, mix the flour with the potato starch; in the other, beat 4 of the eggs with the milk. Combine the dry and wet mixtures. There should be no lumps in the batter, so mix it well with a mixer (or blender). Spear a piece of lard on a fork and use it to grease the skillet. Cook all the crêpes this way until golden. Mix the farmer cheese with the sour cream, sugar, and vanilla sugar (blend it if you want a smooth, non-grainy filling). In a separate bowl, beat the remaining egg until fluffy and gently fold it into the cheese mixture. Spread the filling along the edge of each crêpe and, tucking in the top and bottom slightly, roll it up. Preheat the oven to 400°F (200°C). Grease a baking sheet with butter, arrange the crêpes on it, dot the tops with pieces of butter, and bake about 15 minutes. Let the crêpes cool, then serve. Enjoy!
