Out of eggs but really craving pancakes? Here's the fix. These come out tender and airy, and honestly they hold their own against pancakes made the usual way. Serve them with honey, your favorite jam, condensed milk, fresh fruit and berries — whatever you like.

    1. Warm the kefir in the microwave for 1 minute at 800 watts. 2. Pour the kefir into a deep bowl and add the sugar, salt, cinnamon, baking soda, and vegetable oil. 3. Mix everything together. 4. Add the sifted flour a little at a time, stirring constantly so no lumps form. 5. Pour the boiling water into the batter in a thin stream. 6. You should end up with a batter about the consistency of thick sour cream. 7. Cook the pancakes in a skillet, keeping them on the small side, or the batter may tear. Thanks to the cinnamon, they come out tender, fragrant, and lacy. Enjoy!
