Shakshuka with Chard and Zucchini

    1. Heat half of the grapeseed oil (or any other flavorful vegetable oil) in a skillet over medium heat and sauté the garlic and green onion for about 4 minutes, stirring often so nothing burns. 2. Finely chop the kale and add it to the sautéed garlic and onion. Stir in the water and cook until the leaves wilt. 3. Take the pan off the heat and transfer everything to a blender. Add the cumin and coriander. 4. Blend until smooth, then blend in the olive oil and lemon juice. 5. Add the chopped lettuce and parsley to the blender and blend to a smooth purée. Season with salt and, if needed, thin the purée with a little water. 6. On the stovetop, heat a deep, oven-safe skillet with the other half of the grapeseed oil. Add the jalapeño and cook until soft. 7. Add the grated zucchini and chopped chard and cook until soft as well. 8. Stir in the green purée and adjust the salt to taste if needed. 9. Using the back of a spoon, make 8 wells in the green purée and crack an egg into each. Cook until the whites just begin to set, seasoning the shakshuka with a little salt as you go. 10. Meanwhile, preheat the oven to 325°F (160°C). Transfer the skillet to the oven for 20 minutes. 11. Sprinkle the finished dish with feta and garnish with chili, green onion, and parsley. Serve the shakshuka hot. Enjoy every bite!
