Grilled Red Mullet

The perfect recipe for cooking red mullet outdoors—so good! In our family, we love making this tasty little sea fish exactly this way. It comes out really, really delicious—tender, juicy fish inside with a crisp, flavorful crust. I highly recommend giving red mullet a try on the grill!

    1. Scale the fish, remove the innards and gills. Rinse well, then pat the fish dry with paper towels. 2. Coarsely chop the parsley (save a little for serving) and put it in a bowl; sprinkle with salt and freshly ground pepper, add the fish, and season it with salt and pepper too. With your hands, rub the seasonings well into the fish all over—inside and out. 3. Pour olive oil over everything and toss the fish with the parsley to coat. 4. Let the fish marinate (at least 30 minutes, up to 4 hours). 5. Grease the grill grate with vegetable oil and lay the fish on it. The coals shouldn't be too hot. 6. Grill the fish on both sides until cooked through. 7. Serve the fish hot with fresh herbs and vegetables. Enjoy!
