Foil-Baked Mackerel over Coals

Food cooked over coals, over a fire, always comes out the tastiest—honest! Fish over a campfire is a great alternative to kebabs. You've got to mix up the picnic menu somehow!

    1. Add salt, pepper, and lemon juice to the softened butter and stir until smooth. 2. Peel an onion and cut it into rings. 3. Gut the fish; remove the gills, fins, and tail. Pat dry with paper towels. 4. Rub the fish with the seasoned butter, inside and out, and tuck the fresh herbs into the belly. Lay some onion on a sheet of foil, set the fish on top, and add more onion over the fish (this keeps it from scorching), then wrap it up. It's best to wrap each fish separately. 5. Cook the fish over the coals. The time depends on how hot the coals are—they should be fully burned down and glowing a little red inside. On average, figure about 20 minutes per fish. 6. Unwrap the foil, discard the onion (it'll be charred), and set the fish on the grate for a few minutes to get a golden, tasty crust. Done. Enjoy!
