Quick Sour Cream Dough for Hand Pies

When hungry guests turn up out of nowhere—or your own kids and the neighbors' descend at once—this quick hand-pie recipe saves the day. The dough needs no rising time, and any filling works.   • Make a well in a mound of flour. Crack an egg into it and add the salt, baking powder, and sour cream (or vegetable oil, or melted—but not hot—butter). Working from the center outward, gradually add the kefir. And that's it—the dough is ready! Shape your pies quickly.
  • Get creative with the filling based on whatever you have on hand. I like these pies best pan-fried, but my neighbor bakes hers in the oven and is just as happy with them.
