Skoblyanka — Pan-Fried Pork and Potatoes
A delicious meat skoblyanka that takes me back to a carefree childhood. Our grandmothers used to make this for us all the time, so I decided to revisit the recipe and share it with you!

Step 1:
Gather the ingredients.

Step 2:
The pork should be partly frozen—firm but not fully frozen—so it's easy to slice. Cut the meat into thin slices and season with a little pepper.

Heat 2 tablespoons of vegetable oil in a skillet and sear the meat over fairly high heat for about a minute. Then transfer it to a bowl.

Peel and dice the onion, and sauté it in the remaining oil until soft.

Then add it to the bowl with the meat.

Step 6:
Wash, peel, and cut the potatoes into strips. Pour oil into the skillet and fry the potatoes until almost tender.

Step 7:
Add the meat and onion on top of the potatoes and cook over low heat until everything is done. You could honestly stop right here—this is where Grandma's version ends.

Step 8:
If you'd like to add another layer of flavor, serve it with a lingonberry or cranberry sauce. Crush two unpeeled garlic cloves with the flat side of a knife. Heat the olive oil in a saucepan and warm the garlic over medium heat for 1 minute, then discard it. Add the rinsed and lightly dried cranberries or lingonberries to the oil and cook briefly until they release their juices. Add the allspice, sugar, and honey, and simmer for three minutes.

The first version pairs well with pickles, fresh vegetables, sauerkraut, or just a sprinkle of fresh herbs. The second stands on its own—just spoon the berry sauce over the top. Enjoy!
