Banana Pakoras

Banana pakoras are chunks of banana dipped in a batter of flour, milk, and spices (season it however you like). They're quick and simple to make, so they're great for breakfast or whenever you need something fast to go with tea.

    Make the batter. Whisk together the dry ingredients—flour and spices.

    Then gradually pour in the milk, whisking until smooth. The batter should be about as thick as sour cream, so it coats the banana pieces.

    Peel the bananas and cut them into pieces about 1/2 inch (1 cm) thick.

    Drop the banana pieces into the batter and toss so each one is fully coated.

    Heat a skillet with the oil and add the pakoras, using a spoon to scoop up some batter underneath each one. Fry until golden.

    Set the finished pakoras on a paper towel and blot the tops as well to soak up excess oil.

    If you like, dust the pakoras with powdered sugar—though for me, the natural sweetness of the bananas is plenty. Enjoy!
