Lacy Kefir Crepes (Made with Boiling Water)

The secret is the boiling water—it "cooks" the batter in a special way for those signature lacy holes! I could never make crepes until I found this recipe; now they're an everyday thing in our house.

  • Beat the eggs to a froth and add a pinch of salt. Pour in 2 cups of boiling water, stirring constantly. Add 2 cups of kefir, still stirring. Sift the flour and mix in the baking soda, then add the flour to the kefir mixture in small batches. Stir in the sugar and vegetable oil and mix everything well. Cook on a well-heated skillet.
