Low-Calorie Cottage Cheese and Bran Fritters

Sugar-free, diet-friendly cottage cheese fritters for anyone watching their health! I'm on a diet—no sugar, nothing fried, none of the good stuff—but I was really craving something sweet. Dried apricots and prunes do a great job standing in for the sugar, and they keep the calorie count low. Recommended for anyone trying to slim down.

  • Mix all the ingredients together, with just a tiny pinch of salt. Shape into patties (I got 10). Rub your hands with olive oil so the mixture doesn't stick. Set them on parchment paper and bake. I baked mine for 15 minutes with bottom heat (I have a gas oven), then another 10 with top heat—though 10 on top was too much; 6 minutes would have been plenty.
