- Soak the beans overnight ahead of time. In the morning, cook them with half of the Italian pepper and the bay leaf until tender. At the end of cooking, remove the pepper and drain the cooking liquid into a separate bowl. Mix all the marinade ingredients and let them sit for an hour. Remove the bone from the pork roast, trim the meat off it, and cut away any excess fat. Cut all the meat into 4 large but thin slabs. Pour the marinade over the pork and refrigerate for 2 hours. In oil, sauté the onion, chopped Italian pepper, oregano, and minced garlic until soft. Add the beans, rice, and the reserved bean cooking liquid. Bring the dish to a boil, season with salt, and cook over low heat until the rice is done. Brown the garlic, stir it into the rice, and season with vinegar. Spread the beans and rice over the center of each meat slab, covering nearly the whole surface. Fold the edges of the meat over to form an envelope and tie it closed with kitchen twine. Set the pork on a baking sheet and roast at 340°F (170°C) until the stuffed pork rolls are baked through.
