Description
Cubans managed to combine Spanish traditions, as well as African and Caribbean ones in their dishes. Salted dried cod (bacalao) was brought to Liberty Island by the Spaniards. And after centuries, despite the abundance of various other fresh fish, it is still one of the most sought-after Cuban products. Without it, it is impossible to cook such a meal as, say, Bacalao la Viszcaina-a (this is the same cod that is prepared according to an old Basque recipe with sofrito, that is, with spices and Cuban vegetables stewed in Cuban oil). And fried Cuban bread is a must-have addition to Bacalao la Viszcaina-a.
Thanks to the colonialists, who brought a certain sophistication in their time, Cuba began to cook such fluffy omelets with fillings from pieces of Cuban meat, or vegetables with seafood.
The inhabitants of the African continent, who were forcibly transported to Cuba at one time, very quickly managed to master dishes made from Cuban fruits and vegetables. They learned how to cook food like Tostones (we are talking about thinly sliced and fried Cuban banana), Yuca con Mojo (and here we are talking about sauce with yucca, spices and Cuban garlic). Gradually, the rice that arrived from China gradually became the basis for the dish Arroz Relleno (Cuban rice with different fillers) and Moros y Cristianos (we are talking about a mixture of black beans and rice).
I must say that the main set of products of Cuban cuisine is quite simple. Cubans prefer chicken and pork from meat, to a lesser extent beef and lamb, and they like to cook from black Cuban beans, rice and corn from cereals. The food includes yucca cassava, as well as sweet Cuban potatoes malanga and boniato, banana platanos, which is prepared in a thousand and one ways.
In short, the set of Cuban products is small. Therefore, Cuban chefs like to season food with different sauces of pepper and tomatoes, onions and garlic, and so on. Even from Cuban fruits.
Cuban dessert is not prepared. These are a variety of Cuban fruits, either whole, or in pieces, or in pies.
By the way, the names of Cuban dishes are a special conversation. Thanks to the creative approach of Cubans to this issue, such Cuban dishes as moors and Christians, "moors and Christians" (talking about rice with black beans), or ropa vieja, etc., in short, what is not a reason to start cooking in the Cuban spirit?
