Description
Cubans have managed to blend Spanish traditions in their dishes along with African and Caribbean ones. Salted dried cod (bacalao) was brought to the Island of Freedom by the Spaniards. And centuries on, despite an abundance of other fresh fish, it remains one of the most sought-after Cuban products. Without it, you can't cook a meal like, say, Bacalao a la Vizcaína (this is the same cod, prepared to an old Basque recipe with sofrito — that is, with spices and Cuban vegetables stewed in oil). And fried Cuban bread is a must-have addition to Bacalao a la Vizcaína.
Thanks to the colonizers, who brought a certain refinement in their day, Cuba began cooking fluffy little omelets with fillings of Cuban meat, or vegetables with seafood.
The people of the African continent, who were forcibly brought to Cuba back then, very quickly managed to master dishes made from Cuban fruits and vegetables. It was they who learned to cook foods like tostones (thinly sliced and fried Cuban plantain) and yuca con mojo (here we're talking about a sauce with yucca, spices, and Cuban garlic). Over time, the rice that arrived from China gradually became the base for the dish arroz relleno (Cuban rice with different fillings) and moros y cristianos (a mix of black beans and rice).
It has to be said that the core set of Cuban ingredients is fairly simple. For meat, Cubans prefer chicken and pork, and to a lesser extent beef and lamb; among grains they like to cook with black Cuban beans, rice, and corn. Their food includes yucca cassava, as well as the sweet Cuban tubers malanga and boniato, and the platano banana, which is prepared in a thousand and one ways.
In short, the range of Cuban ingredients is small. That's why Cuban cooks like to season food with various sauces of pepper and tomato, onion and garlic, and so on — even with Cuban fruit.
Cuban dessert isn't really cooked. It's the most varied Cuban fruits, whether whole, in pieces, or in pies.
By the way, the names of Cuban dishes are a subject all their own. Thanks to Cubans' creative approach to the matter, Cuban dishes like moros y cristianos, "Moors and Christians" (meaning rice with black beans), or ropa vieja and the like came to be — in short, what better reason to start cooking in the Cuban spirit?
