  • I stumbled onto this recipe completely by chance on a food website. The dish hails from Cuban cuisine. Without a second thought, I set about making it — and then eating it. Here's a look at all the little details of putting it together. Take half a pineapple and cut it into cubes. Cut up the spiny lobster the same way, but leave the shell on — cooking it in the shell keeps the meat from shrinking and lets the flavor come through more. Next, take a good sharp knife and cut each passion fruit in half. Now head to the stove with all of the above and add the lobster first, since it takes the longest to cook. Season the lobster with salt and pepper and sear it for 2–3 minutes per side. Once the lobster has taken on color, flip it shell-side down so it doesn't scorch while the rest of the ingredients cook. Next, add the tiger shrimp to the pan, seasoning them with salt and pepper too. Right after, add your pineapple pieces; like the shrimp, they'll cook quickly. Now for the Cuban secret: pour the Cuban rum into the pan and light it. Once the flames die down, pour in dry white wine, and a couple of minutes later add the passion fruit (the pulp only). With the passion fruit in the pan, stir it in and add the sugar so the sauce takes on a sweet-and-sour flavor. Cook the dish another 5 minutes until done. And it's ready! Seafood Flambé "Mariscada" is meant as an individual appetizer, served on a plate lined with salad greens. It pairs beautifully with white wine. Enjoy!
