  • This recipe is for mussel lovers. It's perfect for a small party, and it looks especially impressive if you cook it right in front of your guests. First, prep the mussels — fresh or frozen both work fine, but rinse them well so no grit sneaks in and ruins the whole thing. Take a large, deep skillet with a good heavy bottom. Heat the olive oil over high heat and add the garlic, chopped very fine or crushed in a mortar. Add the mussels, both the shelled ones and the ones still in their shells (the latter are just for looks). Sauté them, adding the salt, pepper, thyme, parsley, and water. Once the water has boiled off completely, pour in the ouzo — but be careful, because it will catch fire right away.
