Portuguese-Style Beef Steaks
Beef marinated in wine with garlic and chili turns out incredibly tasty! I'm a big fan of the Portuguese approach to beef steaks. The wine, garlic, and pepper marinade makes the meat wonderfully flavorful — perfect for a holiday spread or a simple family dinner alike.

- Since the meat needs to marinate first, start with the marinade. Combine the red wine with the water and garlic, then add the chili paste, white pepper, and salt. Lay the beef steaks in a suitable dish and pour the marinade over them so they're fully covered. Let them sit for 1 hour. Heat a skillet and sear the steaks for 2 minutes per side, then transfer them to a separate plate — note that this first sear is done with no oil. Reheat the skillet, this time add the oil, and sear the steaks again for 2 minutes per side. Leave the steaks in the pan, pour in the marinade, and simmer over medium heat for about 2 minutes. Plate the finished steaks and serve them hot — and don't forget a glass of dry red wine on the side!
