Fried Farmer's Cheese and Cheese Lavash Rolls
For when you want to treat yourself and your family to a special breakfast. This recipe is simple and easy, taking little time and few ingredients. Almost everything you need is likely already in your fridge, and it's sure to win over anyone who tries it.
Cooking method

Step 1:
First, cut the lavash into rectangular serving pieces. You can use the trimmings for something else — we want neat, even sheets of lavash here.

Put the farmer's cheese in a bowl — whatever fat content and texture you like (finely curded is best).

Add finely chopped fresh herbs (I use dill and green onion; parsley works too).

Grate your favorite cheese (coarse works, but since there's not much of it, I grate it fine).

Add the grated cheese, eggs, paprika, turmeric, and salt to taste to the farmer's cheese. You can also add black pepper for a little kick.

Mix until smooth. If your farmer's cheese is curdy like mine, crush it a bit as you mix so there aren't too many big curds — it'll spread more easily over the lavash.

Spread a thin layer of filling over a sheet of lavash.

Roll it up and press gently so the end stays put.

Here's how the rolls turn out — they're quite firm and shouldn't come unrolled.

Add vegetable oil to a skillet, heat it, and fry the rolls over medium heat on both sides until done. You can fry them plain, as they are, and they'll come out like this.

Or you can dip them in egg first, and they'll come out like this. Which way is tastier is up to you — try both and see! Enjoy!
- Since I'm a lazy cook and prefer recipes that are tasty but simple, with no fussing around at the stove, these rolls make me happy with how easy and good they are. I make them often — everyone at home loves them and always asks for more. They're also fairly light on their own and can even fit into a diet.
