- I think everyone knows frying isn't the healthiest way to cook. But every now and then you just want to treat yourself and your loved ones to something a little indulgent yet oh-so-tasty. So today I gave in and made fried potatoes with button mushrooms from a very simple recipe. Here's how it's done. Start by choosing firm, not-too-soft potatoes; peel them and rinse under running water. Then cut them into thin matchsticks. Next, peel the onion and finely chop it. Set a skillet with vegetable oil over medium heat and sauté the onion. While it cooks, wash the mushrooms, pat them dry, and slice them into small pieces. Add the mushrooms to the onion and fry for about 10 minutes, until all their liquid has cooked off. Then add the potatoes and fry everything for another 20–25 minutes. Once the potatoes and mushrooms are fully cooked, dish them onto plates and serve hot.
