No-Bake Cookie and Farmer's Cheese Cake
A delicious no-bake farmer's cheese cake! Treat yourself to a tasty, tender farmer's cheese cake that takes very little time to make - and you won't have to stand over the stove at all. Yes, cakes like this really do exist, and I'm eager to share the recipe with you. Back in the days of Soviet-era shortages, a cake like this could easily have graced a holiday table!
Cooking method

Step 1:
To make the cheese filling, mash the farmer's cheese with a fork. If it's a bit dry, add a little milk or cream to make it soft and moist. Or use pre-blended smooth farmer's cheese.

Step 2:
Separately, whip the cream with powdered sugar into a fluffy, stable cream. The cream should be high-fat, at least 33%, or it won't whip up.

Step 3:
Fold the whipped cream into the farmer's cheese.

Step 4:
To assemble the cake, pour milk into a cup and get the cookies ready.

Line the assembly dish with plastic wrap. Dip each cookie in milk and lay it on the bottom of the mold. Then spread an even layer of the cheese filling. Repeat the layers in the same order until you run out of filling and cookies.

Step 6:
Cover the whole cake with plastic wrap and put it in the fridge for a few hours so everything soaks through and the cake sets. It's most convenient to do this overnight.

Step 7:
Use the wrap to lift the set cake out of the mold. Remove the wrap. If needed, trim the top and sides so the cake is even. Grate the chocolate and coat the cake on all sides.

Decorate however you like. Enjoy your tea time!

A cake like this can be made from cookies, for example. The filling can be quite varied, but one of the tastiest and, in my opinion, healthiest is farmer's cheese. You can confidently offer this cake to children - no doubt they'll love it. The cookies determine the cake's main flavor, so choose what you like best; they can be plain or chocolate. And you can coat the finished cake in ground nuts or drizzle it with melted chocolate.
