    1. Put the egg yolks in a deep bowl, add salt, and mash them well with a spoon until smooth and uniform.
    1. Next, beat with a mixer, gradually adding 1 cup of oil a little at a time.
    1. Now add the freshly squeezed lemon juice and stir.
    1. Then beat again with the mixer, gradually adding the remaining oil.
    1. Press the garlic through a garlic press and add it to the mixture — you can leave it out if you prefer. Add mustard to taste. Stir the homemade mayonnaise well and chill it.
