Homemade Boiled Chicken Breast Sausage

Cooking method

    For homemade boiled sausage, use only fresh chicken fillet that hasn't been frozen. Rinse the chicken fillet under cold running water, pat it dry with paper towels, and cut it into small pieces. Cut the garlic clove into several pieces.

    Using a blender, grind the pieces of chicken fillet with the garlic. Then pour in the cream and add the egg whites. Keep blending the chicken mixture until it's a smooth purée.

    Add the spices: pepper, salt, and oregano.

    Pour in fresh beet juice squeezed from a raw beet. Blend the chicken mixture again until it takes on an even, uniform color.

    Cut two equal-sized pieces each of foil and plastic wrap. First lay the plastic wrap on the table, then place a sheet of foil on top, and spread half of the bright beet-colored mixture onto the foil (about 390 grams of the mixture per sausage).

    Lifting the edges of the foil, shape the sausage, wrapping the mixture tightly like a piece of candy. Wrap the resulting "candy" in plastic wrap. Tie off the foil-and-wrap tails with thread. Do the same with the remaining mixture. Transfer the shaped sausages into plastic bags, tying them tightly.

    Pour water into a large pot and set it over the heat. When the water boils, lower in the bags with the future boiled sausage. Cook for half an hour, turning the bags from time to time so the sausage cooks evenly.

    When the time is up, take the bags out of the boiling water and let the sausage cool completely, freeing it from the wrappers. Once the sausage has cooled, transfer it to the refrigerator to chill for 2 hours.

    Take the sausage out of the refrigerator, slice it with a sharp knife, and lay it on a slice of bread. For juicier sandwiches, you can add a leaf of lettuce.

  • You can make an even healthier, leaner version of this boiled sausage by replacing the chicken fillet with turkey fillet. For a bolder flavor, you can add other favorite spices. This amount of ingredients made 2 sausages, 13 cm long, with a diameter of 5.5 cm. You can also make a single sausage from this amount, but you'll need to increase the cooking time, since one sausage will be much thicker and take longer to cook through. Unfortunately, the beet juice isn't enough to give the sausage a pretty, delicate pink shade, though it didn't affect the taste at all. Homemade boiled sausage must be stored in the refrigerator at 2 to 6 °C, and its shelf life is only 3–5 days.
