Step-by-step cooking

Cooking time: 4 hours
  1. Step 1:

    Step 1.

    Prepare all the ingredients.

  2. Step 2:

    Step 2.

To prepare homemade boiled sausage, we use only fresh chicken fillet, which was not frozen earlier. Chicken fillet is washed under running cold water, dried with paper towels and cut into small pieces. Cut the garlic clove into several pieces.

  3. Step 3:

    Step 3.

Using a blender, chop the pieces of chicken fillet with garlic. Then pour in the milk cream and add the chicken proteins. We continue to beat the chicken mass to a homogeneous puree.

  4. Step 4:

    Step 4.

    Add spices: pepper, salt, oregano.

  5. Step 5:

    Step 5.

Pour in fresh beet juice squeezed from raw root vegetables. Using a blender, beat the chicken mass again until the mass acquires a uniform uniform color.

  6. Step 6:

    Step 6.

Cut off the same-sized pieces of foil and food film 2 pieces each. First we put the film on the table, and then we put a sheet of foil on top, put half of the bright beetroot minced meat on the foil (approximately 390 grams of minced meat will go for each sausage).

  7. Step 7:

    Step 7.

Lifting the edges of the foil, we form the sausage, tightly wrapping the minced meat in the form of candy. Wrap the resulting "candy" with cling film. The tails of the foil with the film are tied with a thread. We do the same procedure with the remaining minced meat. We shift the formed sausages into plastic bags, tying them tightly.

  8. Step 8:

    Step 8.

Pour water into a large saucepan, put it on fire. When the water boils, we lower the packages with the future boiled sausage into it. Cook for half an hour, turning the packages from time to time so that the sausage is evenly cooked.

  9. Step 9:

    Step 9.

After the time has elapsed, we take the bags out of the boiling water and let the sausage cool completely, freeing it from the wrappers. When the sausage cools down, we transfer it to the refrigerator for cooling for 2 hours.

  10. Step 10:

    Step 10.

We take the sausage out of the refrigerator, cut it with a sharp knife and spread it on a slice of bread. Ready-made sandwiches for juiciness can be supplemented with a leaf of green salad.

You can cook an even more healthy and dietary version of boiled sausage by replacing chicken fillet with turkey fillet. For a brighter taste, you can add other favorite spices.
From this amount of ingredients, 2 sausages with a length of 13 cm turned out. The diameter of the sausages was 5.5 cm . From this amount of ingredients, one sausage can be prepared, while the amount of time for cooking must be increased, since the diameter of one sausage will be much larger and it will take more time for the product to be ready.
Unfortunately, beet juice is not enough to give the sausage a beautiful delicate pink shade, although it did not affect the taste in any way.
It is necessary to store homemade boiled sausage in the refrigerator at a temperature of 2 to 6 oC, the shelf life is only 3-5 days.
